Pot Luck: Featuring Nordic Waffles, Betty & Earl's and Burger Dive

Pot Luck - Rosedale Center - Roseville, MN

Have you heard about Pot Luck, the new MN food hall located at Rosedale Center?  There are seven merchants and we tried out three.  We have also already visited the Smack Shack's restaurant in Minneapolis, so technically that makes four.  Pot Luck replaces Revolution and I like these food choices much more.  Plus, they still have more space upstairs, so we will see what is to come up there!

Nordic Waffles



These waffles are sweet, but light, on the thinner side and can really hit the spot if you want something sweet (or savory).  Not too big and not too small.  The menu has great combos of toppings, folded into the waffle like a taco... a taco waffle.  Waffles are making a lot of dessert lists and this place is the reason why.

Smores includes mini marshmallows, graham cracker pieces on a melted chocolate filling.  The waffle with just the melted chocolate would be enough for me, but it's still a good combo.


We also tried a savory maple eggs benedict.  This included an egg, bacon, a splash of benedict sauce with a light maple drizzle.  While the maple syrup was so delicious, I really think they should have stuck with the traditional benedict sauce or even a cheesy version.  Either way, it was still edible!

Biscuits are all the craze!  I was excited to try this place out, especially since I had attempted Jo Gaines' very own biscuit recipe and it was a no go.  They ended up just OK.  Biscuits aren't really a thing here in the midwest unless it come out of a pre packaged can.  So I had really been wanting to fill the void of a really good biscuit.  Betty and Earl's delivered!  Biscuits are so simple and they served up a variety of flavors.  They even had their very own sausage gravy for dipping!  Simple concept with simply good food.

Burger Dive



"Breakfast" was complete so we killed time and shopped in the mall before trying out Burger Dive.  Smaller menu, but my theory is, when you do something well, you stick with what you know.  By then it was busy and we sat at the bar.

We each ordered a burger, a drink and shared the mushroom app since the burgers came with potato chips, that we were not going to consume.  The mushrooms were recommended by the bar tender and they were SO GOOD!  The dipping sauce was really tasty and the mushrooms seemed home made.  They were way better than they looked!

The burgers were great!  The pickles tasted house made, which I think gets "brownie points".  I love my burgers with lots of fixings and sloppy.  These fit the bill.  Plus, half always goes home with me for later.

If you like a classic bar burgers, these will do!  If you need dessert, you could just head on over to the Grand Ole Creamery on the way out and get some ice cream too;)

What could be better than a day of shopping AND eating?
